This delicious quick bread recipe is easy to whip up and full of fresh ingredients. I don’t know about you, but my family loves fresh bread. This last year, we built a backyard vegetable garden for the first time and, not going to lie, I was mostly looking forward to the zucchini plants harvest specifically for the purpose of the yummy texture and flavor it adds to bread. Don’t you love when you have such a versatile vegetable? If you’re looking to add a touch of rustic charm to your baking repertoire, look no further. Originating from the need to utilize abundant zucchini crops during the summer months, this bread is a testament to resourcefulness and creativity in the kitchen.

Let’s Get to The Recipe

Now, roll up your sleeves and get baking! Here’s a tried-and-true recipe for Amish Zucchini Bread that will transport you to the idyllic countryside with every bite.

Preheat the oven to 325 degrees.

Grease your loaf pans – I like to use either butter or olive oil.

Start by whisking together your dry ingredients in a medium size bowl. This includes the flour, baking soda, baking powder, salt, and ground cinnamon.

Set aside.

In your mixer bowl (stand mixer or hand), add your sugar mixture along with eggs and olive oil. Using the paddle attachment, mix until all the ingredients are incorporated.

Add vanilla. Mix for another 20-30 seconds.

Gradually add the dry ingredients until incorporated. 

Add shredded zucchini and nuts (optional). Mix until evenly distributed.

Using a spatula to fold in the chocolate chips.

Divide the batter evenly between your greased loaf pans. 

Bake in your preheated oven for 55-65 minutes until a toothpick inserted to the center of the bread comes out clean (No toothpick? You can also use a spaghetti noodle as a great way to get the job done!) *Cooking times can vary so make sure you don’t skip the toothpick check!

  • 2 mixing bowls
  • 1 spatula
  • 1 measuring cups
  • 1 grater

Ingredients
  

Dry Ingredients

  • 3 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 tsp ground cinnamon

Wet Ingredients

  • 3 eggs
  • 1 cup olive oil*
  • 1 1/4 cups sugar white
  • 1 cup sugar brown
  • 3 tsp vanilla extract

Fold Ins

  • 3 cups zucchini shredded
  • 3/4 cups chocolate chips + a few to sprinkle on top
  • 1 cup chopped walnuts optional

Instructions
 

  • Preheat Oven to 325 degrees
  • Grease your loaf pans (I recommend butter or olive oil)
  • Whisk together your dry ingredients – flour, baking soda, baking powder, ground cinnamon, salt
    3 cups all purpose flour, 1 tsp salt, 1 tsp baking soda, 1 tsp baking powder, 3 tsp ground cinnamon
  • In your mixer bowl (stand mixer or hand), add your sugar mixture along with the eggs and olive oil.
    3 eggs, 1 cup olive oil*, 1 1/4 cups sugar, 1 cup sugar
  • Gradually add dry ingredients to the wet ingredients 1/2 cup at a time, mixing lightly as you go
  • Mix in vanilla.
    3 tsp vanilla extract
  • Add in shredded zucchini and nuts (optional) until evenly distributed.
    3 cups zucchini, 1 cup chopped walnuts
  • Fold in chocolate chips
    3/4 cups chocolate chips
  • Divide the batter evenly between your pans
  • Bake in preheated oven for 55-65 minutes or until a toothpick inserted to the middle comes out clean
  • Let cool – then enjoy!

Notes

FLOUR: Make sure your flour is spooned and leveled so you don’t inflate the amount. If you need an alternative, this recipe can be great with einkorn or almond flour.
OIL: You can sub 1:1 ghee, melted butter or an oil of your choice.
CHOCOLATE CHIPS: Use a high quality chocolate chip for the best results! I always look for options that are made with regular ingredients (cocoa, sugar, etc…)
